Mattias Castro - Taste of Adventure with the Ranger Raptor


Ford challenged Mattias Castro, who is a Paris-based freelance chef currently working at Chardon in Arles, as well as other top chefs from, Germany, Italy and Spain to come up with original and innovative dishes using native, foraged ingredients, and then include the dishes in their menus.



Castro travelled to Camargue and met up with his friend Paul Teina to forage for glasswort, a smooth and succulent plant that thrives in saline environments, such as seacoasts and salt marshes, and paired it with mackerel.
